Chef Tip: No need to pan-fry! Baking the cauliflower steaks will give you that crispy crust you're looking for, without the mess of a frying station.
1 head of cauliflower
1 container Italian-style breadcrumbs
¾ tsp salt
1 egg
1 cup shredded mozzarella
Grated parmesan
Preheat the oven to 350F. Cut your cauliflower into about 2/3-inch slices. Set aside.
Whisk together an egg with a pinch of salt. Set up a dredging station with the eggs in one bowl and the breadcrumbs next to it.
Coat the cauliflower on both sides with the egg then coat them with breadcrumbs. Place it on a parchment paper lined baking sheet.
Bake for 30 minutes. Remove the cauliflower from the oven and add Red Pepper Romesco, mozzarella cheese, and a bit of Parmesan. Bake for another 15 minutes til the cheese is golden and melty.
