Tortellini is cooked in a creamy vodka sauce, featuring our Red Pepper Romesco, for a tasty, pasta dinner ready in just 30 minutes.
Chef Tip: When adding the vodka to the skillet, allow it to reduce and simmer for a few minutes to cook off the alcohol fully. This ensures a mellow flavor, leaving behind the essence of the vodka without the harshness of raw alcohol.
1 lb. tortellini
4 tablespoons butter or oil
3 cloves garlic
½ cup vodka
1 cup heavy cream
1 cup parmesan cheese, plus more for serving
Cook tortellini according to package instructions. Meanwhile, in a large, high-sided skillet, melt butter.
Add garlic and sauté until fragrant, about 30 seconds. Add the vodka, and cook out the alcohol, about 5 minutes.
Add Red Pepper Romesco and cook for 10 minutes. Add cream and cook for an additional 5 minutes.
Add cheese, and stir to incorporate for 2 minutes. Add cooked tortellini to the sauce and toss to coat. Serve with additional parmesan cheese.
