Grilled cheese sandwiches are always welcome on our table, and adding romesco and herbs give this classic sandwich a smoky, pimento cheese vibe that we’re really into.
Chef Tip: Spreading mayo on the outer layer of your bread for grilled cheese gives it an extra crispy crust—trust us!
4 Slices hearty crusty bread
2 TBSP mayo or butter
1/2 cup fresh herbs (we like Dill or Basil, but anything works!)
6 oz shredded cheese
Spread mayo on the outsides of your bread
Build your sandwich starting with your bread (mayo on the bottom), Romesco, cheese, herbs, and more Romesco. Top with the other slice of bread, mayo on the top
In a pan over medium-low heat carefully place your sandwiches in and hear them sizzle lightly. Cook for about 3-4 minutes checking to make sure the underside Is getting golden brown but not burned. Once desired color Is achieved, flip over and continue cooking 3-4 on the other side until golden brown
Once done, remove from pan and let rest for 1 minute
Cut In half (so you can watch the cheese ooze), and serve with remaining Romesco for dipping
