Romesco Hasselback Chicken with Basil and Mozzarella

Contrary to the name, this dish is hassle-free. Get it? Chicken breasts coated in our Red Pepper Romesco and stuffed with Mozzarella and Basil are the perfect weeknight dinner if you’re looking to have some fun with your food.

Chef Tip: Switch up the stuffing with various cheeses and veggies! There are so many ways to make the hassle back your own!

Steps

STEP 1

Preheat your oven to 425°F

STEP 2

Lay your chicken breast down on a cutting board, then place a chopstick or skewer on either side of the breast. This will prevent you from cutting all the way through the breast and create the “hasselback”

STEP 3

Slice the breast, horizontally, leaving about ½ inch between slices, without cutting all the way through to the bottom.

STEP 4

In a medium bowl, toss the chicken breasts with half a pouch of Haven’s Kitchen Red Pepper Romesco, a glug of olive oil, and a heavy pinch of salt.

STEP 5

Place a slice of mozzarella and a basil leaf between each slice of the marinated chicken breast.

STEP 6

Place the chicken on a parchment lined baking sheet tray and bake for 20-25 minutes until the chicken is cooked through and the cheese has melted. Enjoy immediately
